Mashed Sweet Potato Bake

Prep Time: 20 minutes

Baking Time: 20 minutes

Total Time: 40 minutes

 

INGREDIENTS

  • 4 cans (15 oz each) sweet potatoes or yams; drained
  • 1 lg. can (24 oz) pumpkin puree
  • ½ cup (1/2 stick) butter or margarine; melted
  • 4 tsp. pumpkin pie spice
  • ½ cup maple syrup
  • ¼ cup white granulated sugar
  • ¼ cup light brown sugar

Topping:

  • 24 Nilla Wafers
  • 1 tsp. light brown sugar
  • 2 tbsp. butter; chilled

 

PREP. DIRECTIONS

  • Pre-heat oven to 350°F.
  • Lightly grease 12” x 9” baking dish.
  • Mash sweet potatoes (yams) in large bowl with potato masher until most lumps are gone.
  • Beat sweet potatoes (yams), pumpkin puree, melted butter, pumpkin pie spice, syrup, and sugars with electric mixer on medium speed until well blended.
  • Spread mixture evenly into greased baking dish.

TOPPING DIRECTIONS

  • Crush Nilla Wafers in small bowl.
  • Mix brown sugar with wafers and blend together with chilled butter, using your fingers.
  • Sprinkle topping over mixture in baking dish.

BAKING DIRECTIONS

  • Bake 20 minutes or until thoroughly heated through and topping is lightly browned.
  • Serve warm.
