Mashed Sweet Potato Bake

INGREDIENTS
- 4 cans (15 oz each) sweet potatoes or yams; drained
- 1 lg. can (24 oz) pumpkin puree
- ½ cup (1/2 stick) butter or margarine; melted
- 4 tsp. pumpkin pie spice
- ½ cup maple syrup
- ¼ cup white granulated sugar
- ¼ cup light brown sugar
Topping:
- 24 Nilla Wafers
- 1 tsp. light brown sugar
- 2 tbsp. butter; chilled
PREP. DIRECTIONS
- Pre-heat oven to 350°F.
- Lightly grease 12” x 9” baking dish.
- Mash sweet potatoes (yams) in large bowl with potato masher until most lumps are gone.
- Beat sweet potatoes (yams), pumpkin puree, melted butter, pumpkin pie spice, syrup, and sugars with electric mixer on medium speed until well blended.
- Spread mixture evenly into greased baking dish.
TOPPING DIRECTIONS
- Crush Nilla Wafers in small bowl.
- Mix brown sugar with wafers and blend together with chilled butter, using your fingers.
- Sprinkle topping over mixture in baking dish.
BAKING DIRECTIONS
- Bake 20 minutes or until thoroughly heated through and topping is lightly browned.
- Serve warm.
