New Year’s Resolutions: To make them, to break them, or to just not bother with them at all.

The general consensus seems to be that the first New Year’s Resolutions were made by the ancient Babylonians approximately 4000 years ago, when they resolved to return any borrowed farming equipment back to its rightful owners for the upcoming new year.  Of course, back then, this resolution was set for the vernal equinox and not January 1st.  Additionally, it was the early Christians who passed on the ideal of using the turn of each new year as a point of reflection on the past and way of resolving to improve ourselves in the new year to come.  These general ideals are what we still hold to today, when we make our own personal New Year’s Resolutions.  The idea of making things right or better, especially ourselves, certainly seems like a nice way to start off any new year; and it’s with that positive spirit that so many of us eagerly start off each year in an attempt at betterment.      

I have never actually made any New Year’s Resolutions in the past, so I guess that puts me in the just not bother at all camp; at least until now.  The positive side of that is that I’ve never broken any resolutions, either.  I guess we’ll see how long that lasts, though.  I need to say that I’m not entirely sure why I’ve decided to do so this year, but maybe it’s just the right time to make some real changes in my life and have some accountability for sticking to them.  Well, whatever the reason, here is my list of resolutions for the new year.

1. Cut Fast Food (most of it, anyway) out of my diet. I often feel lethargic and crappy after eating it anyway, so it might as well go.

2. Reduce my sugar intake; yes, including chocolate. This is going to be a really tough one for me, but there is too much Diabetes in my family to not make an effort here.

3. Hit the gym at least 3 days a week. Even if I just go slap the building, I need to stick with this one.  Just kidding (sort of).

So, as I venture forth into this new world of resolutions, does anyone have any tips to share on sticking with th ese things?  Also, please feel free to share your own personal resolutions with us.  We can s upport each other in our quests.

Updates:

Week 1 – The first week of the new year is now in the books and so far all is well in Resolutionland.  I know it’s only one week, but need to start with one before I can get through the year.  So, I worked out four days last week; spent three of the days in the gym and the fourth was a Hula Workout that was much more of a workout than I had ever expected and I’m still feeling it.  And it was totally FUN!! Go figure?!  I also had no fast food and no dessert all week.  That last one was really tough for me, but I’m hanging in there with it.  I did have a doughnut for breakfast, yesterday, but that was my only really naughty food for the week.  I’d say I’m winning! : )

Week 2 –  Two weeks of the new year is complete and all of my resolutions are still in tact.  So far things seem to be going pretty well.  I worked out four days this past week.  Still LoVe the Hula Workout.  Unfortunately, I did a 30-day shred workout on Friday and my calves are even more sore today from it; can barely walk actually.  Doesn’t bode well for being able to get in a workout today and that’s not cool.  Anyway, in other news I have still completely avoided fast food.  YAY!!  And last night was my first dessert of the year.  It was my aunt’s birthday, so must indulge a little for birthday cake! : )  I also start my new job in a couple of weeks.  That has  nothing to do with my resolutions, but a good thing for the new year to share.  Hope all is well with all of you!!

Week 3 – So, week three of the new year has come and gone (almost) and I’m still doing great on the resolutions front.  I again took the time to workout four days this week.  Considering I still really hate working out for the most part, I’m very proud of myself for continuing to hang in there with it.  I have also managed to still completely avoid any and all fast food.  So far, I don’t even miss it.  I did have dessert one night this past week, while out to dinner with a friend.  It was a very delicious apple crisp (figured I was at least getting some fruit in there – LOL), but I only ate about half of it and tasty as it was, it wasn’t satisfying at all.  In the past, the very recent past, I would have thoroughly enjoyed such a dessert, but it didn’t do a thing for me.  Maybe this is a sign that my body is really shifting into a healthier place.  Or maybe it was just a fluke.  I guess only time will tell.

2010 Movies in Review

 

In honor of the last Movie Monday of 2010, this is my first year-end movie recap covering all of the new releases I’ve seen over the past year. Since I haven’t done this in the past, I’m going to start with the list of my top three films from 2009 and then give my ratings for the movies I saw in 2010.  I’ll be using my five heart rating system, where one is the least number of hearts a film can receive and five is the most (see my previous post explaining what each  number of hearts indicates).  So, here we go, in the order in which I saw them.

Mashed Sweet Potato Bake

Prep Time: 20 minutes

Baking Time: 20 minutes

Total Time: 40 minutes

 

INGREDIENTS

  • 4 cans (15 oz each) sweet potatoes or yams; drained
  • 1 lg. can (24 oz) pumpkin puree
  • ½ cup (1/2 stick) butter or margarine; melted
  • 4 tsp. pumpkin pie spice
  • ½ cup maple syrup
  • ¼ cup white granulated sugar
  • ¼ cup light brown sugar

Topping:

  • 24 Nilla Wafers
  • 1 tsp. light brown sugar
  • 2 tbsp. butter; chilled

 

PREP. DIRECTIONS

  • Pre-heat oven to 350°F.
  • Lightly grease 12” x 9” baking dish.
  • Mash sweet potatoes (yams) in large bowl with potato masher until most lumps are gone.
  • Beat sweet potatoes (yams), pumpkin puree, melted butter, pumpkin pie spice, syrup, and sugars with electric mixer on medium speed until well blended.
  • Spread mixture evenly into greased baking dish.

TOPPING DIRECTIONS

  • Crush Nilla Wafers in small bowl.
  • Mix brown sugar with wafers and blend together with chilled butter, using your fingers.
  • Sprinkle topping over mixture in baking dish.

BAKING DIRECTIONS

  • Bake 20 minutes or until thoroughly heated through and topping is lightly browned.
  • Serve warm.

Unstoppable (mini-review)

Unstoppable is based on a real life incident and is essentially the story of 28-year veteran train engineer Frank Barnes (Washington) and rookie conductor Will Colson (Pine) as they work to stop an unmanned, out of control freight train filled with a toxic substance before it crashes into a highly populated rural Pennsylvania town.

If you like action and trains, no doubt you’ll love this film.  For me it was a surprisingly well made action flick.  Though most likely the railroad technicalities aren’t entirely accurate, as they never usually are in these kinds of films, it shouldn’t be a problem for the average viewer.  It’s easy to get caught up in this film as the characters, storylines, and the action are all very engaging.  Additionally, the acting is first-rate all around, which also often isn’t the case in these types of films.

As an aside, I just need to say that if the rail worker who causes the incident and the corporate VP in charge are accurate portrayals of those running our country’s rail systems, we should all be very concerned.

All in all, I highly recommend the movie with ♥ ♥ ♥ ♥.

Chocolate Chip Cheesecake “Burger” Cookies

Prep Time: 20 minutes

Chilling Time: 20 minutes

Total Time: Approx. 40 minutes

INGREDIENTS

  • 1 tub (8 oz) whipped cream cheese
  • ½ cup fine granulated sugar
  • 1 tsp. vanilla
  • 1 cup semi-sweet chocolate chips (minis preferable)
  • 1 box round vanilla wafer cookies (full size or minis)
  • 1 cup semi-sweet chocolate chips for melting

PREP. DIRECTIONS

  • Mix cream cheese, sugar, vanilla and chocolate chips (minis) in small bowl.
  • Place a small dollop of cream cheese mixture on flat side of vanilla wafer cookie and press another vanilla wafer cookie on top; lightly press together to hold in place, like a little burger. Set aside on a plate or tray.
  • Continue filling wafers with cream cheese mixture, as indicated in previous step, until all of mixture is gone. No doubt you’ll be eating a little of mixture as you go along and that’s perfectly okay. : )
  • Melt chocolate chips in microwave safe bowl approximately 2 minutes (check after 1 minute) or until chocolate is glossy and fully melted when stirred.
  • Dip one end of each cookie burger into melted chocolate and place dipped cookie on chilled nonstick cookie sheet or parchment paper lined cookie sheet.

CHILLING DIRECTIONS

  • Place cookie filled cookie sheet in freezer to harden chocolate for approximately 20 minutes.
  • Remove from freezer and store refrigerated.

Chocolate Chip Cheesecake Crescent Cookies

Prep Time: 15 minutes

Baking Time: 10 – 15 minutes

Total Time: Approx. 30 minutes

 

INGREDIENTS

  • 2 tubes (8 oz each) refrigerated crescent dough
  • 1 tub (8 oz) whipped cream cheese
  • ½ cup fine granulated sugar
  • 1 tsp. vanilla
  • 1 cup semi-sweet chocolate chips (full size or minis)

PREP. DIRECTIONS

  • Heat oven to 350°F.
  • Lightly spray nonstick cookie sheet with baking spray.
  • Mix cream cheese, sugar, vanilla and chocolate chips in small bowl.
  • Unroll dough and separate each into 2 long rectangles. Press each into 12×4-inch rectangles and firmly press perforations to seal.

Spiral cookies:

  • Spread a light layer of the cream cheese mixture over each rectangle fully to one edge and ¼ in. from other end.
  • Starting with fully layered edge of short end, roll up each rectangle; press edge lightly to seal.
  • Use a serrated knife to cut each roll into ¼ in. sliced spirals.
  • Place cut side down on sprayed cookie sheet about a half-inch apart.

Loaf cookies:

  • Cut each rectangle into ½ in. strips and cut each strip into thirds.
  • Spread a light layer of the cream cheese mixture over each strip and lightly roll into small loaf shape; press edge lightly to seal.
  • Sprinkle with granulated sugar, colored sugar, or sprinkles and lightly press into dough.
  • Place each on sprayed cookie sheet about a half-inch apart.

Creative cookies:

  • Cut each rectangle into ½ in. strips and cut each strip into thirds.
  • Spread a light layer of the cream cheese mixture over each strip and fold or twist into any variation you choose for a variety of little treat packages.  Just have fun with it and see what you come up with; press edges lightly to seal.
  • Place each on sprayed cookie sheet about a half-inch apart.

BAKING DIRECTIONS

  • Bake 10 to 15 minutes or until lightly golden brown.
  • Let cool for 10 minutes and gently remove from cookie sheet.
  • Refrigerate for at least 1 hour before serving.
